Potato and Bacon Scones
These taste fantastic! But, I don’t make them as often as I should, probably because I prefer the little bite size ones which take longer to cook.
We eat these as the main breakfast dish, but they would also taste great accompanied with eggs!
Ingredients: makes 2-3 servings; 88 calories per scone.
- 3-4 medium potatoes (or ~2 large potatoes)
- 100g of bacon, diced/crumbled (or a couple of slices)
- 1 egg, beaten
- 1/4 cup of flour (~2 tbsp)
- salt/pepper
Dice and cook the potatoes 15-30min. (depending on their size). While the potatoes are boiling, start cooking the bacon. When the bacon is done cooking, lay them down on a plate lined with paper towels, BUT keep the bacon grease for frying the scones later. When the potatoes are done cooking, drain them and mash them with a fork. Add the crumbled bacon, egg, and seasonings. Mix well. Then add the flour and stir until well mixed. If the mix does not hold together, then add a little more flour.
Next, drop a spoonful of the mix into the skillet with the bacon grease and press down gently to flatten it. Cook about 3-4min. on each side to brown, and then lay them on a paper towel to absorb any excess grease.
Makes about 8 scones.
