Fresh Veggie Soup

When was the last time that you made your own soup?  For me, it was just a few days ago, but I really never even thought about it until about 1 1/2 years ago!  I don’t think that enough people make their own soup, even though it is super simple and very delicious!  It is also one of my favorite things to do in the cold winter months when root vegetables are in abundance!

You can take almost any veggie you like: carrots, potatoes, beets, parsnips, zucchini, etc. and add some vegetable stock, onions, garlic, and/or seasonings (like oregano/basil/herbes de provence).  Sometimes I just call this a “Marché Soup” or more properly “soupe du marché” because it is comprised of all the veggies I bought from the market.  Let the vegetables cook in the broth (time varying between 15-30m depending on what you are cooking) and then puree it (possibly in batches if you are making a lot of soup).

If you want a thick soup, just add enough broth to cover all of the vegetables, or you could always add more broth before or after to thin the soup out.  In the photo above, I made fresh zucchini soup with a creme fraiche heart dusted with cumin.  :)
